There is no fixed formula to a good cashew. It depends on the soil, the season, how long the kernel dried and how carefully it was graded afterwards. Those variables need attention, and attention does not stretch across twelve product lines.
Working with one ingredient means every decision — harvest timing, roast profile, how long a batch rests before packing — gets made for the cashew alone.
It is a smaller way of doing things than most brands choose. It is also the only way we have wanted to do it.
